What is the main purpose to this type of drawing technique? The purpose is quality, detail, definition, and realism. Yeah sure it's fun to draw cartoon, anime, or people in a normal manner, but what about when you want to draw those very same concepts in a more serious, detailed, and defined way? That is when the realistic technique comes in. For example, if you are drawing an animal in this fashion, you have to learn how to draw realistic fur so that the coat on a cat looks real enough to assume the sketch or drawing is a photo.
